Ingredients

  • 1 cup vanilla pudding prepared and cooled
  • 1 cup heavy whipping cream chilled
  • 2 tablespoons sugar powdered or superfine
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers or cookies for layering
  • 1/2 cup candy corn for layering and decoration

Equipment

  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Clear glasses or jars
  • Spoon for layering

Method

  1. Whisk the heavy cream with the sugar and vanilla extract until soft peaks form, creating a fluffy whipped cream.
  2. Fold the whipped cream gently into the cooled vanilla pudding to keep the mixture light and airy.
  3. Spoon a generous layer of the pudding mixture into the bottom of each clear glass, spreading it evenly.
  4. Add a layer of crushed graham crackers or cookies over the pudding, spreading them lightly to create a crunchy contrast.
  5. Repeat the layers: add more pudding mixture on top of the cookie crumbs, smoothing the surface gently.
  6. Top the parfait with a few more crushed cookies and decorate with whole candy corn on the very top for a festive look.
  7. Gently press the toppings down and chill the parfaits in the refrigerator for at least 30 minutes before serving to set the layers.

Notes

For an extra touch, sprinkle additional crushed cookies or candy corn on top just before serving. These parfaits can be made ahead and stored in the fridge, making them perfect for gatherings.
