- Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper for easy cleanup.
- Unroll the thawed puff pastry sheets on a lightly floured surface. Using a sharp knife or pizza cutter, cut into 24 small squares, about 2 inches each. Place these squares evenly on the prepared baking sheet.
- Prick each pastry square a few times with a fork to prevent puffing up too much during baking.
- Bake the pastry squares in the preheated oven for 10-12 minutes until they turn lightly golden and crispy. Keep an eye on them to prevent over-browning.
- While the pastry bakes, combine fresh cranberries, sugar, and a splash of water in a small saucepan. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens into a glossy, jam-like sauce, about 5-7 minutes. Remove from heat and let cool slightly.
- Slice the brie into small pieces, about half an inch thick, ready to place on the baked pastry.
- Remove the pastry squares from the oven and let them cool for 1-2 minutes so they are firm enough to hold toppings without breaking.
- Top each pastry with a small spoonful of the cranberry sauce, spreading it gently over the surface.
- Place a piece of brie cheese on top of the cranberry, pressing lightly to help it settle into the tartlet.
- Optional: brush the edges of each pastry with beaten egg for a shiny, golden finish, then return to the oven for an additional 3-4 minutes until golden brown.
- Remove from the oven and let the bites sit for 1-2 minutes to set. Drizzle with honey or balsamic glaze if desired, and garnish with chopped thyme or rosemary for extra aroma.
