  • 1 package puff pastry sheets thawed in fridge for 30 minutes
  • 1 cup fresh cranberries can substitute dried cranberries for a sweeter flavor
  • 2 tablespoons sugar adjust to taste
  • 1/2 cup brie cheese cut into small pieces
  • 1 egg beaten egg for egg wash
  • 1 teaspoon fresh thyme or rosemary optional, chopped
  • optional honey or balsamic glaze for drizzling after baking

Method
 

  1. Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper for easy cleanup.
  2. Unroll the thawed puff pastry sheets on a lightly floured surface. Using a sharp knife or pizza cutter, cut into 24 small squares, about 2 inches each. Place these squares evenly on the prepared baking sheet.
  3. Prick each pastry square a few times with a fork to prevent puffing up too much during baking.
  4. Bake the pastry squares in the preheated oven for 10-12 minutes until they turn lightly golden and crispy. Keep an eye on them to prevent over-browning.
  5. While the pastry bakes, combine fresh cranberries, sugar, and a splash of water in a small saucepan. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens into a glossy, jam-like sauce, about 5-7 minutes. Remove from heat and let cool slightly.
  6. Slice the brie into small pieces, about half an inch thick, ready to place on the baked pastry.
  7. Remove the pastry squares from the oven and let them cool for 1-2 minutes so they are firm enough to hold toppings without breaking.
  8. Top each pastry with a small spoonful of the cranberry sauce, spreading it gently over the surface.
  9. Place a piece of brie cheese on top of the cranberry, pressing lightly to help it settle into the tartlet.
  10. Optional: brush the edges of each pastry with beaten egg for a shiny, golden finish, then return to the oven for an additional 3-4 minutes until golden brown.
  11. Remove from the oven and let the bites sit for 1-2 minutes to set. Drizzle with honey or balsamic glaze if desired, and garnish with chopped thyme or rosemary for extra aroma.
