Method
 

  1. Start by washing the cherry tomatoes and olives thoroughly. Pat dry with a clean towel to remove excess moisture.
  2. Thread each mozzarella ball onto a toothpick or small skewer, adding a cherry tomato next to mimic the eyeball's shape. Repeat until all bites are assembled.
  3. Cut each olive into thin slices to create the bloodshot veins around the 'eyeball'. Carefully insert an olive slice into the side of the mozzarella, pressing gently to secure.
  4. Arrange the assembled 'eyeballs' on a serving platter in a spooky pattern. Optional: drizzle with balsamic glaze for a bloodshot effect and a sweet tang.
  5. Garnish the platter with small sprigs of fresh herbs for a touch of color and a fresh aroma. Serve immediately for best appearance.
