  • 2 cups granulated sugar preferably superfine for easier melting
  • 1 cup heavy cream keep chilled for better control
  • 1/2 cup unsalted butter preferably high-quality
  • 1 teaspoon vanilla extract brightens the flavor

Method
 

  1. Line your baking pan with parchment paper, leaving an overhang for easy removal.
  2. Combine sugar, heavy cream, and butter in a heavy-bottomed saucepan over medium heat.
  3. Stir constantly with a silicone spatula, listening for the mixture to begin bubbling gently and smell the rich aroma of caramelizing sugar.
  4. Bring the mixture to a gentle boil, then reduce heat and simmer for 5 minutes, stirring regularly until it thickens slightly and turns a rich golden caramel color.
  5. Remove the pan from heat and stir in vanilla extract and a pinch of sea salt to enhance the flavor.
  6. Pour the hot mixture into your prepared pan, smoothing the top with a spatula for an even surface.
  7. Let the fudge cool at room temperature for about 2 hours, allowing it to set and develop a glossy finish.
  8. Once cooled, lift the fudge out of the pan using the parchment overhang and place on a cutting board.
  9. Cut the fudge into squares with a sharp knife or pizza cutter, revealing a smooth, shiny interior.
