Ingredients

  • 1 cup creamy peanut butter natural preferred for richness and smoothness
  • 1/2 cup powdered sugar adds sweetness and helps bind
  • 1/4 cup honey acts as a sweetener and binder
  • 1/2 cup semi-sweet chocolate chips for topping and flavor
  • 1 cup old-fashioned rolled oats for chewy texture
  • 1 teaspoon vanilla extract for flavor depth
  • a pinch salt enhances flavor

Equipment

  • baking dish
  • Silicone spatula
  • Microwave-safe bowl
  • Parchment paper
  • Sharp knife

Method

  1. Line your baking dish with parchment paper, leaving overhang for easy removal.
  2. In a microwave-safe bowl, combine the peanut butter, honey, and vanilla extract.
  3. Microwave the mixture in short 10-15 second bursts, stirring after each, until smooth and gooey—this takes about 30 seconds to 1 minute.
  4. Add a pinch of salt and the oats to the melted mixture, then stir until evenly combined and sticky.
  5. Pour the oat and peanut mixture into the prepared dish. Use a silicone spatula to press it firmly and evenly into the corners, creating a smooth surface.
  6. Sprinkle the chocolate chips evenly over the top and gently press them into the surface so they stick and melt slightly.
  7. Refrigerate the dish for at least 2 hours, or until the mixture is firm and set.
  8. Once firm, lift the bars out using the parchment overhang and place on a cutting board.
  9. Use a sharp knife to cut into 12 even squares, wiping the blade clean between cuts for neat edges.
  10. Serve immediately or store leftovers in an airtight container in the fridge for up to a week.

Notes

For a softer texture, let the bars sit at room temperature for 10 minutes before serving. You can also add chopped nuts or sprinkle sea salt on top for extra flavor.
