- Preheat your oven to 375°F (190°C). In a mixing bowl, gently toss the sliced peaches with granulated sugar, lemon juice, and cinnamon until well coated. Spread the peach mixture evenly in a baking dish.
- In another bowl, combine rolled oats, flour, brown sugar, cinnamon, and a pinch of salt. Add the cold, cubed butter and use your fingertips or a pastry cutter to work it into the dry ingredients until the mixture resembles coarse crumbs.
- Crumble the oat topping evenly over the peach filling, pressing lightly to adhere. The topping should cover the fruit completely with some larger crumbs for texture.
- Place the baking dish in the preheated oven and bake for about 35 minutes, until bubbling around the edges and the topping is golden brown and crispy.
- Remove from oven and let cool slightly before serving. The crumble should be fragrant, with a crunchy topping and tender, caramelized peaches underneath.
Notes
For extra flavor, add a splash of vanilla or almond extract to the fruit filling. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
