- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- In a large mixing bowl, whisk together the sifted flour, baking soda, cinnamon, ginger, cloves, and salt until well combined. This creates an even spice distribution.
- In a separate bowl, stir together the granulated sugar, brown sugar, and melted butter until the mixture is smooth and slightly creamy, and the sugars are dissolved.
- Beat in the egg, pumpkin puree, and vanilla extract to the sugar-butter mixture, stirring until the batter is uniform and fragrant with warm spices.
- Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. The dough should be soft but scoopable.
- Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each cookie with the back of the spoon for even baking.
