  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted and cooled
  • 1 cup pure pumpkin puree
  • 1 large egg

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, whisk together the sifted flour, baking soda, cinnamon, ginger, cloves, and salt until well combined. This creates an even spice distribution.
  3. In a separate bowl, stir together the granulated sugar, brown sugar, and melted butter until the mixture is smooth and slightly creamy, and the sugars are dissolved.
  4. Beat in the egg, pumpkin puree, and vanilla extract to the sugar-butter mixture, stirring until the batter is uniform and fragrant with warm spices.
  5. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. The dough should be soft but scoopable.
  6. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each cookie with the back of the spoon for even baking.
