Ingredients
  

  • 14 oz extra-firm tofu pressed and cubed
  • 1/4 cup dried apricots chopped
  • 2 tablespoons sesame seeds toasted
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil toasted
  • 1 tablespoon honey or maple syrup
  • 2 green onions green onions sliced, for garnish

Method
 

  1. Press the tofu between paper towels with a weight on top for about 15 minutes until excess moisture is removed, helping it crisp up during searing.
  2. In a small bowl, whisk together soy sauce, rice vinegar, toasted sesame oil, and honey or maple syrup to make a glossy, flavorful sauce.
  3. Heat a dry skillet over medium heat and toast the sesame seeds, stirring constantly, until golden and fragrant, about 2 minutes. Remove and set aside.
  4. Chop the dried apricots into small pieces, or slice fresh apricots if using, and set aside for later.
  5. Cut the pressed tofu into 1-inch cubes. Heat 1-2 tablespoons of oil in the skillet over medium-high heat.
  6. Add the tofu cubes to the hot skillet and sear for about 3-4 minutes per side, until golden brown and crispy on all sides, making a satisfying sizzling sound.
  7. Stir in the chopped apricots and pour the sauce over the tofu, cooking for another 2-3 minutes until the sauce thickens and coats the tofu evenly, with a glossy finish.
  8. Remove the skillet from heat, sprinkle the toasted sesame seeds and sliced green onions over the top, and gently toss to combine all flavors.
  9. Transfer the tofu and sauce to serving bowls, letting them rest for a minute to meld the flavors before serving hot.
